Gogay jam

    3 Kg. ripe guavas.
    500g. white sugar.
    1/2 liter of water
    Juice of a lime and/or lemon zest or lemon peel.
    A small sprig of cinnamon.

▪︎Casquitos de guayaba. Guava jam.
Guava casquitos, in fact today we prepared a dessert.
Guava is a tropical fruit, very typical in Cuba, sweet and very aromatic. With this fruit, desserts, juices and concentrates are made to be used as sauces in some Caribbean recipes. But what I like the most is guava in the syrup or paste.
So I share with you the recipe for guava casquitos, inherited from the family. It is a dessert that should not be missing from your recipe book to surprise your loved ones; enjoy them with queso fresco or cream cheese.
Wash and remove the skin from the guavas, cut them into two halves, very carefully remove the seeds using a spoon to avoid breaking the pulp.
This is how we manage to give this shape of small helmet, hence the name casquitos.
Then place the guava in a saucepan with all the ingredients and cook over medium heat for 45 minutes to 1 hour.
Remove the fruit, being very careful not to break them. Pour them into a glass saucepan and let them cool completely. Serve ideally with queso fresco or cream cheese, or any type of cheese available that doesn't taste too strong.
Queso fresco is the most typical cheese in Cuba, made quite simply by livestock farmers, using traditional methods.
Unfortunately there is no cheese at all these days. It doesn't matter, it won't stop us from enjoying such a delicious dessert.
Definitely worth trying during your next stay in the rebellious Caribbean island.
