Rich eggplants in syrup


    Three or four small eggplants.
    1 3/4 liters of water.
    1 pound refined or coarse sugar to taste.
    Juice of 1 lemon.
    1 clove or cinnamon stick, although you can also use nutmeg or any other flavor you prefer.

Any day is suitable for enjoying a good dessert with the family, like a delicious sweet eggplant: easy, quick to make and ideal to accompany toast in a hearty breakfast. In addition, eggplants are easily available on agros this season.


Some people peel the eggplant, but you can also leave it with the peels, it is cut into pieces without removing the "guts", which gives it a particular taste.

Put the water, sugar and lemon juice in a saucepan with the eggplant pieces and boil over normal heat until the syrup thickens (this will take about 5 to 10 minutes).

Let cool and eat with crackers, toast or soft bread.

It's another way to eat eggplant and also a different sweet that will surprise the family.
