Lemon and coconut milk sorbet
- 2 cups of water (5oo ml)
1/2 cup lemon squeezed into juice
1 cup of sugar
1/2 cup unsweetened coconut milk
Pour the water, lemon juice and sugar into a saucepan. Bring to the boil and simmer uncovered for 4-5 minutes, stirring occasionally, until you obtain a transparent syrup. Leave to cool for around twenty minutes in the fridge.
Add the coconut milk, mix well, pour into a bowl and put in the freezer.
After about 3 hours, stir everything well using a whisk and then put it back in the freezer. After about 2 hours, stir a second time and return to the freezer for at least 3 more hours before serving.
