Arroz con leche cubano (rice pudding)
- ▪︎1 liter of milk
▪︎250 gr of rice
▪︎100 gr of sugar
▪︎1 pinch of salt
▪︎ Lemon peel
▪︎1 stick of cinnamon (or anise)
▪︎2 tablespoons of ground cinnamon
▪︎raisins (optional)
One of the most popular Cuban desserts is undoubtedly rice pudding, a very traditional and easy to prepare homemade recipe, which you can then combine with candied fruits such as guava or pineapple.
There is nothing better after a tasty meal than to finish with an even more delicious dessert, and thus guarantee perfect digestion.
We cook the rice in a saucepan with water, which should be twice the volume of the rice, for about 10 minutes.
Meanwhile, in another saucepan or a fairly deep container, over low heat, we add the milk with the sugar, salt, raisins and cinnamon stick, stirring constantly to prevent it from sticking, when it starts to boil we wait 1 minute, and immediately add all the rice and let it boil for another 15 minutes, stirring constantly, until it absorbs all the milk, without drying out too much. Finally we add the lemon zest.
Now we can remove it from the heat, let it cool and serve it in a bowl or deep dish sprinkling with cinnamon powder. I recommend consuming it cold, on a slice of homemade iced pineapple.
It is indeed a very refreshing dessert that can be prepared and stored in the refrigerator for several days, although to be honest it is very difficult for such a treat to last a long time.
