Chicken sausage

    ▪︎4 chicken thighs
    ▪︎1 cup smoked meat (bacon, chorizo or similar)
    ▪︎1 onion
    ▪︎Other spices to taste (optional)
    ▪︎3 to 4 eggs
    ▪︎½ cup breadcrumbs
    ▪︎1 tablespoon of oil
    ▪︎Pepper and salt to taste.

Grind the smoked meat. Clean and grind the onion. Maybe beat the eggs. Put a pan on the fire with the chicken, water and salt, let it cook, when it's done, drain the chicken and grind it too.
In a deep bowl, mix the chicken, smoked meat, beaten eggs, onion, breadcrumbs well. Sprinkle everything with pepper and salt.

Pour the well-mixed and compact dough into a pan greased with oil. You can cook it in a bain-marie for 30 minutes, or put it in the oven until it is golden brown. Leave to cool for a few minutes then unmold and cut to taste.

Note: if there was cheese, you can sprinkle it on the mixture before putting it in the oven.
Now we can eat a good homemade chicken sausage of which we are sure of the contents.
