Fresh fish
- ▪︎Snapper (or other fish)
▪︎Wheat flour
▪︎Oil
▪︎4 cloves of garlic, minced
▪︎2 peppers or chili peppers
▪︎200 g sliced ham
▪︎1 tablespoon chopped parsley
▪︎Lime juice
▪︎Thyme
▪︎Cooking wine
▪︎Sugar cane brandy
▪︎Salt and pepper to taste
It is a very traditional way of cooking fish with what Cubans love the most, sugar cane brandy or good Cuban rum.
Clean the fish well and cut it into pieces or fillet it. Season with lemon juice, thyme, salt and pepper for a few minutes, then rub in the wheat flour.
Heat a little oil in a frying pan over medium heat and fry the fish until golden brown.
Then add the garlic, peppers, ham and lightly brown everything. Then add the chopped parsley, turn, and finally add the wine and brandy.
Flambé and it's ready to serve, perhaps with some fried or boiled sweet potatoes.
Important: be sure to take a good glass of rum to prepare the palate, and the mind, before tasting such a Creole delicacy.
