Peppers stuffed with meat (Pimientos rellenos)

    ▪︎4 peppers

    ▪︎Oregano, coriander or parsley
    ▪︎Tomato sauce
    ▪︎Scalding wine
    ▪︎Oil
    ▪︎Grated cheese (optional)

Finally, the long-awaited peppers have arrived at agromarkets (April 2, 2021). There are also enough tomatoes, peppers, carrots, chard, cabbage, lettuce and other vegetables that there aren't even any queues, and I admit it's strange to be able to buy food of agricultural origin without having to queue, fortunately. Then we can make very Cuban peppers stuffed with chicken, in the best style of the country's peasants.

You must first cook and grate two chicken quarters, which are then sautéed in a Creole sauce, prepared in a little oil with tomatoes, carrots, onion, garlic and finely chopped cachucha peppers, along with cumin, oregano, salt and pepper to taste. Let the chicken cook in this sauce until it is quite dry.
Then we have to cut the peppers into two halves, cleaned well, then we fill them with this chicken. Place the stuffed peppers in a pan with a little oil, perhaps tomato sauce and cooking wine, finally add grated cheese and cover to cook over medium heat for about 5 minutes.

Serve with white rice and fried plantains. This is one of the typical Cuban family banquets that you cannot miss on your next adventure in Cuba.
