Pescado cubierto con camarones en salsa de Queso (fish covered in shrimp with cheese sauce)

    2 to 3 fish fillets
    400g. peeled shrimp
    100g. of butter and a drizzle of olive oil or other.
    6 crushed garlic cloves
    1 or 2 limes
    Salt and pepper to taste

    The cheese sauce:
    Ingredients for 300 ml. of sauce.
    200ml. milk cream
    100g. cheese
    100ml. rum (cognac or brandy optional)
    Salt

Here is another very simple recipe in Cuban cuisine. It is a grilled fish fillet in butter, with squeezed lemon juice, pepper, salt and garlic, and then served covered with grilled shrimp with a cheese sauce.



In a fairly large pan, over medium heat, you can grill the fish fillets and shrimp alongside, with butter and a drop of oil, garlic and lemon juice. A pinch of pepper and salt to taste and it's done in 10 minutes.
When serving, cover the fish with the shrimp and cheese sauce.

We then put the cream to heat in a saucepan, and immediately add the cheese pieces. We can also use grated cheese of course.
After a few minutes we will see that the cheese begins to melt.
Now it's time to add a pinch of salt and a dash of rum. If you don't want it, you can do without it, but it adds a very special flavor to the sauce.
After we make sure that the alcohol has evaporated, and that there are no pieces of cheese left without having completely melted, we can turn off the heat and serve immediately.
A little treat that I recommend you try at home, or in Havana, at the Buenaventura restaurant, where this dish is particularly well made.
