Banana rolls

    Eight bananas
    4 eggs
    4 tablespoons of sugar
    2 tablespoons of rum or wine to taste
    1 teaspoon orange or lemon zest
    2 tablespoons of ground sugar
    2 tablespoons of cinnamon
    and the necessary oil

Peel and chop the bananas into slices and make a puree. Add a little cinnamon to taste. Beat the whites until the meringue, gradually add the yolks, sugar and orange zest until you obtain a paste.

Put a greased pan on the fire and pour a ladle of pasta, which is a very thin cake, turn it over, take it out and fill it with the banana in the center and make a roll and put it in a source. Repeat while you have pasta. Sprinkle with ground mixed sugar and cinnamon and flambé with rum, already on the table, to serve.
