Ropa Vieja Cubana
- For the meat:
1 kg of beef
2 bay leaves
Black pepper and salt to taste
For the sauce:
1 large onion
1 pepper
2 or 3 cloves of garlic
½ teaspoon ground cumin
1 teaspoon of oregano
100 ml of red wine
50 ml of cooking wine
100 ml of tomato puree
La Ropa Vieja Cubana.
These are not old clothes that you eat no matter how hungry you are. For all Cubans, one of the most iconic dishes is undoubtedly the delicious and popular Ropa Vieja.
Today we are going to teach you the recipe for this surprisingly simple Cuban delicacy.
Preparation :
Preferably in the pressure cooker, cook the beef with enough water and salt to taste. Cook for about 30 minutes or until the meat is tender enough to shred.
Drain the meat in a bowl and wait for it to cool.
Using two forks, shred the meat well and set aside.
To prepare the sauce, crush the garlic cloves well and cut the onion and pepper into small squares. Saute them for about 30 seconds in a very hot pan with a teaspoon of oil.
Then add the cumin, oregano, red wine, cooking wine and tomato puree to the sauce. Stir until everything is well mixed for another 30 seconds.
In a large skillet, add the shredded meat and cover well with all the sauce. Cook over medium heat for a few minutes.
Adjust the salt to your taste and let the juice reduce.
Finally serve with white rice, to dip in the sauce, and fried plantain and enjoy this iconic Cuban dish.
Ropa Vieja can also be prepared with pork, chicken or veal.
