Cuban Fried Chicken
- Chicken :
▪︎4 chicken thighs.
▪︎mustard.
▪︎bitter orange juice.
▪︎salt.
▪︎pepper.
▪︎a few cloves of minced garlic.
▪︎chopped coriander.
▪︎wheat flour.
▪︎frying oil.
Ingredients for mustard and honey sauce.
▪︎2 tablespoons of mustard.
▪︎4 tablespoons of honey.
▪︎2 tablespoons of (olive) oil.
▪︎1 pinch of thyme.
▪︎1 pinch of rosemary.
Fried chicken is perhaps one of the most popular dishes in the world and Cuba is no exception. Maybe it's just the bitter orange seasoning that makes ours different.
Lately we've had practically only chicken in the markets and, since it's always thighs, today we're going to improvise a little, and we're going to debone the chicken just for the pleasure of a change. With the bones we will still make a broth to use later to prepare rice.

Preparation:
To begin we will debone the chicken thighs to have clean pieces, which will need to be seasoned with mustard, bitter orange juice, chopped coriander and garlic, as well as salt and pepper to taste. We will let it rest for at least an hour.
You will then dredge each piece of chicken in flour before frying in plenty of oil over medium heat, until it is nicely browned on all sides. Then it's good.
Recommended to serve with a sauce, such as mojo criollo ...or we can prepare one of my favorite sauces, with mustard and honey. The spicy taste is then divine.
Mostaza and honey salsa
Preparation:
In a bowl, mix the honey and mustard. Stir well with a fork. Add a little (olive) oil, which lightens the sauce and gives it a very nice texture. Finally add the finely chopped thyme and rosemary to the sauce, stir everything, and it's ready to dress any meat or vegetables.
