Roast pork in a pan with sweet and sour sauce
- ▪︎about 2 kg of pork for around 4 people. I prefer fillets or ribs for this dish.
▪︎50 ml of mustard.
▪︎50 ml of honey.
▪︎salt and pepper.
▪︎a dozen cloves of garlic.
▪︎chives.
For the sweet and sour sauce.
▪︎ginger.
▪︎pineapple.
▪︎cucumber.
▪︎honey or sugar.
▪︎vinegar.
▪︎1 tablespoon of tomato sauce.
▪︎1 teaspoon of soy sauce.
▪︎2 teaspoons of cornstarch.
Cuban pork dishes are very typical. The pig is the most traditional livestock animal in the country.
It is the most abundant pork and the best quality meat that can be found along the length and breadth of the island at a good price.
Apart from the pigsties run by the state, there are above all numerous private breeders who ensure the presence of pork and its derivatives in our agricultural markets.
It should be noted that the quality of this meat is truly remarkable, since pig breeders are forced to manage to feed them with leftovers from daily meals, or other naturally organic foods, in the absence of the industrial pelleted products that we can't import for a very long time.
These few pieces of pork must be marinated for an hour, in a mustard and honey sauce, with finely chopped garlic and chives, salt and pepper.
We will use a saucepan filled with water up to half the volume taken by the meat to cook the pork. Preparing a roast in a pan is good in the absence of a real oven. Ultimately the result is so appreciated that the Cubans have made it a traditional method.
After 2 hours of cooking or so, the meat is nicely browned, tender and juicy.
When it's time to serve, we'll add the sweet and sour sauce, a simple and foolproof recipe below.
You need to mix 100 ml of vinegar with 100 g of sugar and 200 ml of water. A small piece of finely cut ginger and small pieces of fruit such as pineapple, papaya, mango or even cucumber, carrots or even peas.
Today we had pineapple and cucumber so it will be okay.
We're going to mix everything in a small saucepan with a tablespoon of tomato sauce and a teaspoon of soy sauce. After cooking over low heat for 5 to 10 minutes, we will finally add the 2 teaspoons of cornstarch diluted in 100 ml of water very slowly and we turn off the heat immediately after. The sauce quickly became thick and it is good for presenting our dish.
Some boniatos fritos, that is, fried sweet potatoes, maybe some avocado and cucumber salad; and bacon and chorizo rice would be the perfect accompaniment to complete this delicious dish.
For rice it's just as simple. You just have to add pieces of bacon and chorizo sautéed with chili peppers to the normal preparation of white rice, and a small spoonful of turmeric powder to enhance the taste and provide the typically yellow color.
