Fried fish steaks (Ruedas de pescado frito)
- ▪︎Fish cut into steaks.
▪︎Vegetable oil.
▪︎Lemon juice.
▪︎Salt and pepper.
▪︎Fresh parsley.
▪︎Wheat flour.
Ruedas de pescado frito.
This is perhaps the simplest and usual way of preparing a fish for Cubans, but not because of its simplicity it would be less delicious. We have already fried the whole fish once, now we will cut it into steaks to better share the delicacy.
Season the fish steaks with salt, pepper and lemon. Let sit for at least 30 minutes.
Bread the steaks in wheat flour and fry them in hot oil, about 3 minutes on each side.
Serve them with a wedge of lemon and chopped fresh parsley, or with this parsley sauce that I particularly prefer.
Perejil salsa:
This sauce is also used to accompany any grilled or baked fish.
Ingredients :
▪︎1 egg yolk.
▪︎3 tablespoons of fresh parsley.
▪︎1/2 squeezed lemon.
▪︎125 ml melted butter (or oil)
▪︎250 ml of milk cream (or milk)
▪︎Salt and pepper to taste.
Preparation :
Mix the yolk, parsley, salt and pepper in a blender. Add the lemon juice and continue to beat until you obtain a smooth sauce. In a saucepan, beat the cream with the butter, or the milk with the oil. Put on low heat and beat again without stopping, adding the mixture from the mixer. After having integrated all the ingredients, let the sauce cook for another minute and then it's good to go.
If we only have milk, it's still fine, only it may need to be thickened at the end with corn starch or wheat flour, diluted in water.
