Breaded eggplant


At the moment there are plenty of eggplants in Havana's agricultural markets and you can eat them very differently. I take the opportunity to prepare breaded eggplants. Very simple to make and such a delicious bite.

You just have to cut an eggplant into slices and pass them through the beaten egg, sprinkled with salt and pepper, and then through the breadcrumbs to finally fry them for just one minute in very hot oil. With a sprig of lemon zest, it tastes like heaven.

It's simple and it's good.
