Arroz con carne de puerco

In Cuba, you often have to make food profitable for more days or more people. Such is the case with this pork rice recipe.
Sometimes we only have a few pieces of meat left, insufficient to prepare a meal for the whole family. So we take advantage of it effectively and make a good pork rice, which will surely delight everyone.
Method of preparation:
In a saucepan over medium heat, with a little fat, add the pork pieces.
Season them with bitter orange, pepper and salt to taste. When they start to brown on all sides, then add the crushed garlic, onion, tomatoes and chopped peppers and let everything cook for about 5 minutes.
Then add the measure of water needed to cook the rice, saffron or bijol, pepper and more salt if necessary. Cook for about 15 minutes until the pork is tender.
Once the pork is cooked, add the raw rice, previously cleaned and washed of course, in an approximate proportion, depending on the quality of the rice, of 1 to 2 cups of water for each cup of rice. Steam until the rice is cooked.
Optionally, you can add peas, small pieces of carrots, green beans and olives. You can also give this dish a more special touch by adding spices like mustard or ginger, when the meat is fried.
Serve garnished with red peppers and, to complete an unforgettable tasting, fried ripe plantains and avocado.
